Hi Kathleen, you are correct that parchment is not a great option when it comes to those types of pans. The best way to prep a pan like that would be to oil thoroughly and dust with flour right before pouring the batter in the pan. Be sure to bake the cake until you can see the edges begin to pull away from the sides of the pan. Hope this helps!
