Hi Debbie, some cake recipes, like Angel Food Cake or Chiffon Cake do instruct you not to grease the pan, so the batter can cling and rise up the side of the pan during baking; these are generally egg foam cakes. Most other cakes, especially Bundt cakes, do require greasing the pan, although you may be able to get along without greasing the sides of a simple layer cake pan, as long as you've lined the bottom with parchment paper and don't mind releasing the sides with a spatula. We generally prefer to be on the safe side and grease the pan, unless otherwise instructed.
