I'm a "belt and suspenders" adherent all the way! Ever since I started spraying cake pans with nonstick spray, adding parchment, and respraying the top of the parchment, I can't recall any problems with cake not releasing from the pans. I have baked countless layer cakes this way. I'm not going to mess with a proven winner. NOTE: I use precut parchment circles with tabs on each end that extend beyond the top of the pan when the parchment is placed inside the pan. The tabs probably don't do anything to prevent sticking, but they're handy for peeling the parchment away from the cooled cake in one smooth pull.
