Thanks for this article. While I think cooking spray works beautifully and is so easy, just being around the spray when used gives me horrible coughing fits. I must be allergic to something in the spray. I also have a difficult time getting the spray off my pans afterward. For years now, I have made my own cake goop (I call it pan coating), but my recipe is slightly different. My recipe calls for 1.5 parts flour to 1 part shortening and 1 part vegetable oil. I use it with parchment paper or even wax paper. It is really inexpensive and works well. It is great for all the nooks and crannies in specialty pans. One year, I made jars of it for my friends who enjoy baking and gave it to them along with a pastry brush and the recipe as a Christmas gift. Using the cake goop is also a positive move for the environment!
