I always crack eggs gently on the counter, but occasionally a shell shard separates from the shell’s lining membrane. Since I crack the eggs into a stainless steel bowl, any bit of white eggshell is obvious in the darker bowl. A damp finger will catch it against the side of the bowl, and I am spared the rolled eyes of my family when they detect a bit of shell in their scrambled eggs, muffins, or soufflé.
