I learned the two egg technique from my mother-in-law. Yes, only one egg cracks each time. I enjoy wondering just how many eggs the unbroken egg will crack. You only need to crack the last egg on the bowl edge.
I have always used a separate bowl to receive the loose egg, and I add that egg to the mix before I crack the next egg into the bowl. Growing up on a farm, sometimes we get an egg w/ an embryo in it. I do not want that in my batter.
