I have used a stainless steel bowl to proof my dough. It's good to put parchment paper in first to stop the bread dough from from sticking. Helps lift the dough out of the bowl too. I don't track proof rising. I set a timer for 2 hours (I'm using only the Soughdough starter for rise). If you use yeast, after 1 hour, poke the dough. If it springs back, give it another hour.
