Hi Jonathan,
I'm having such issues with my bread dough ! It seems to come together well, feels good , but once it has doubled in size I dump it out and press it out it is very lax and keeps spreading, so I'm thinking it's to much hydration? And I don't know how to figure that one out. I have started using a bread machine to knead my dough, I manage the rise outside my bowel then shape and let it rise again and bakein my oven . I've been using King Arthur Bread Easy as Can Be Receipe but I bake in the oven can you help ? I would love to find a receipe that like yours goes into a 8.5x4.5 I too have USA pans . But is there any advise you could share? Thank You ,Donna
