Hi John! Glad to hear your getting back into bread baking! To keep the flour from sticking to your hands, I would recommend either flouring your hands or dipping them in water prior to handling the dough. If the dough starts to stick after a time, you will want to reapply and make sure to get any dough off before resuming the handling of the dough. Happy baking!
