At the beginning of the pandemic you couldn't find active dry yeast, remember that? I always keep at least a pound of instant yeast in the freezer and then a small jelly jar full in the refrigerator. I've never had the frozen yeast go bad or not perform well. It really is easier to use and very inexpensive too, especially if you bake a lot.
