I'm with you PJ...have used this yeast for years. A 1# brick at the Mennonite store is a meager $5.99. This yeast never fails. I store it in an air tight container in my freezer. I take it out, measure the amount I need, and put it back in the freezer. I never allow it to come to room temp. Just a reminder that if your recipe says to proof your yeast in 1/3 cup of water, and you are using instant instead of active, be sure to add that 1/3 cup to the liquid in the recipe. I am using 1/3 C. only as a example. Bake, bake and bake!!!!!!!!!!!!!!
