I have baked cakes and cookies for years with no salt. There is plenty of sodium in baking powder and baking soda. I read the tip to not add salt to cakes and cookies in a healthy eating cookbook years ago. My sister and I make the same coffeecake recipe. She adds salt, I do not. We can't tell the difference between the two. I have yet to have a cake fail. So not adding salt will not have terrible consequences at all. If you forget the vanilla extract--that is a different situation. In that case, I completely agree you need something flavorful to help it along.
