My ancestors once baked in cast iron dutch ovens over coals here in the western NC mountains, before wood-fired ranges were available. Both methods require careful minding of your fire to be successful. All the best cooks and bakers in my family learned to cook on wood-fired ranges and were the best of the best! When I die, I want to go to heaven to taste Mama's fried chicken again, and Aunt Evvie's wonderful cakes! Until then, maybe I'll give it a go myself. 😋
