Hi David, this may have had to do with the type of chocolate you used, or could also be related to when you added the chocolate to the whipped cream mixture. I would aim to use a good melting chocolate rather than chocolate chips (which have a coating on them which tends to keep them from melting completely), and add the melted chocolate after the ice cream mixture has developed medium peaks.
