I was looking for the perfect cookie for ice cream sandwiches when I found this recipe. This was perfect! I did not make the ice cream from scratch, instead, I opted for a premium vanilla ice cream. I also sprinkled the top of the bars with coarse sal and spread a thin layer of caramel on the bottom layer. So yummy
