Hi Dawn! It sounds like your recipe may be a bit wet for being baked at this relatively lower temperature of 320 degrees. The bananas and buttermilk are likely the culprit here but it could also just be not enough flour. It is difficult to say without seeing the recipe or even doing a test bake ourselves. I always recommend using recipes that call for the weights of the ingredients and measuring using a scale. This will ensure you get the most accurate amount of each ingredient.
