Hi Dawn! It sounds like your recipe may be a bit wet for being baked at this relatively lower temperature of 320 degrees. The bananas and buttermilk are likely the culprit here but it could also just be not enough flour. It is difficult to say without seeing the recipe or even doing a test bake ourselves.
