Hi Christine, we also reached out to PJ for some insight and this is what she said: "Christine, I'd try baking pound cake or banana bread in your air fryer by setting the temp. to 325°F, bake cycle if you have it, and covering the top of the loaf securely as soon as it shows signs of browning, which could be as little as 5 to 10 minutes. Otherwise the top will be burned long before the center is cooked. Given even regular ovens have trouble baking loaf cakes and quick breads all the way through without over-baking their crusts, this could well be a steep challenge for your air fryer — which intensifies the degree to which the outer crust browns (thus, the "frying" effect). In your shoes, I'd give this a try; bake it for the amount of time your recipe says, and don't be surprised if it has to go longer. Check frequently, testing the center and peeking underneath the cover to see how the top crust is doing. Write down your time and temperature so that if it's successful, you'll remember what to do next time; and if it's not, you'll recall what NOT to try. Good luck —"
