Thank you for this great blog post and all the wonderful comments from those who are dealing with Stuff. The first time I made the Old Fashioned Apple Cake I missed the part about "stand mixer" and mixed it by hand. Turned out kind of funny, but we loved it anyway. Yesterday I made biscuits -- with simple pastry flour, not self-rising. Realizing there was no leavening, I mixed up a T. of flour, salt, and baking powder and worked it into the dough with my 8 gentle kneads. They actually rose and tasted fine. Now I really must label that canister of pastry flour!
