Thank you! I feel so seen. What I do is "stalk" a recipe for a few days prior. I find the right recipe. I read the recipe through and imagine the steps in my mind. Then I gather the ingredients/shop. When I finally bake, I'm much more grounded. Also, I try not to cook and bake multiple things in the same session because I inevitably mess something up. I do feel badly though - as you said - when my limited energy is wasted on something that didn't come out great. (Last week I made grain free crackers impulsively, while baking other things. They're usually great, but I switched up the flour ratios because I didn't take the time to find the printed version of the recipe where I had marked the right amounts that work.) That's another reason to use KAF recipes - at least I can trust the recipe, if not always myself! ... Also love the permission to use one-bowl recipes and mixes. KAF gluten free brownie mix is my go-to for potlucks, and everyone thinks I'm a baking genius! ... Another issue is not being able to both bake and go to the party in the same day, so I choose things that will be fine 24 hours later. Would love to follow your blog, if I can figure out how to use the app ;)
