Hi Kat, with the Bread Lab breeding wheat for climate-resiliency, the aim is for the wheat crop to be able to withstand the chaotic effects of climate change, like droughts and flooding.  Organic is a labeling term that indicates products were produced by practices verified by the USDA — primarily without the use of synthetic pesticides and fertilizers.  

For non-organic grains, including wheat, some synthetic pesticides are federally approved for use during growing. Some are also federally approved for use during storage or transportation, though any use after milling would be uncommon and reserved as a last resort option. In the case of any application, federal regulations and label guidance must be closely followed. 

We also offer a full line of certified 100% organic flours, where the use of synthetic pesticides is prohibited from use at any stage in the production process as a general rule. We offer our organic line to ensure that our customers have options to suit their individual needs. Our organic flour line is independently verified by QAI (Quality Assurance International) to ensure organic certification requirements are strictly followed.
