Hi Michelle, we are always exploring options to add heirloom wheat flour to our product line. As of yet, we have not found a way to accomplish this as the supplies are very limited and unstable. However, we make significant contributions to local growers of heirloom wheat to express our serious support. You may find it interesting that our whole wheat flours are used at Plymouth Plantation in their baking. They expressed that our flours are the closest they've found to what the pilgrims used in the 1600s. After providing the highest quality flour for over 225 years, we consider that a huge compliment!

From the beginning, all King Arthur flours have been sourced non-GMO in addition to not being bleached or bromated. We also don’t add any artificial preservatives to them. You may be interested in knowing that GMO wheat isn’t approved for sale or commercial production anywhere in the U.S., where all of our wheat is grown and milled.

For non-organic grains, including wheat, some synthetic pesticides are federally approved for use during growing. Some are also federally approved for use during storage or transportation, though any use after milling would be uncommon and reserved as a last resort option. In the case of any application, federal regulations and label guidance must be closely followed. 

We also offer a full line of certified 100% organic flours, where the use of synthetic pesticides is prohibited from use at any stage in the production process as a general rule. We offer our organic line to ensure that our customers have options to suit their individual needs. Our organic flour line is independently verified by QAI (Quality Assurance International) to ensure organic certification requirements are strictly followed.
