I have the luck living near the Breadlab in Washington state, and have had the pleasure of getting a tour of the facility by Dr. Jones. Their work at the lab is truly groundbreaking. Finding, breeding and growing wheat that is resistant to climate change is just the tip of the iceberg. If you are ever in western Washington, a field trip to the Breadlab is a must. If you take a class at the King Arthur baking school that happens to share the facility, chances are you will have a visit by Dr. Jones to talk to the students about the work the Breadlab is accomplishing. The wheat seed room is mind boggling!
