Hi Kathy, we consulted with Lydia, who did the food styling for this blog, and this is what she recommends: brush a tiny amount of water over the piece of modeling chocolate you want to decorate with sprinkles (use a damp towel, then swipe a dry pastry brush over it so it's just barely wet), then set the slightly wet side of the modeling chocolate into a plate or sheet pan that has been evenly spread with sprinkles. Push the chocolate into the sprinkles so they stick into the modeling chocolate about halfway. You'll still lose a few sprinkles, but most will stick.
