Thanks for such a well tested taste test. Being of Italian descent, I literally felt ill when I red about the cheddar cheese, but then to each his/her own. My nonna never used a pan like the one you describe, but then she was Italian, not Sicilian, and believe me, there is a difference! Right now I'm into the cast iron pizza, with this work in that recipe?
