My absolute favorite bread recipe is made with 100% spelt flour. For a whole grain bread, it has a surprisingly light and satisfying texture. My question is, can a whole grain recipe be used to make a no knead bread? My stand mixer just died and it may be a bit before I can replace it. If I could convert this to a no knead recipe, it would be a huge help!
The recipe ingredients are: 2-3/4 cup Spelt flour, 2-1/2 TBSP honey, 2 TBSP butter, 1-1/2 tsp salt, 3/4 cup + 2 TBSP water, and 2-1/4 tsp yeast. Aside from the reduction in yeast (using method #1) would any of the other ratios need to change?
