Hi Szilvi, our gluten-free bread recipes aren't great candidates for the no-knead technique, although I have seen some recipes on other websites that advertise this method. I'm not exactly sure how that works, since this process depends on gluten development occurring over a longer period of time, but without gluten, no gluten development can occur. In fact, our gluten-free bread recipes require quite vigorous beating of the batter-like dough, so this hands off approach isn't likely to work well, at least when using our current recipes and gluten-free flours.
