I accidentally came across a bread recipe decades ago using only 1 Tbsp. baking soda, and 1 1/2 Tsp. of baking powder to 3 C. flour, 1 C. sugar, and 1/2 Quart Buttermilk (Main Ingredients - Not All) for 1 loaf of bread. No kneading, giving a lot of time for rising, just thoroughly mix & put in greased & floured loaf pans. Cook for 1 hour to 1 hour 10 minutes (when cake tester inserted comes out clean) @350 degrees.
