Love the article! The second paragraph describes exactly our first (and almost second) experience. We managed to salvage the first pizza but the oven was a disaster. Luckily we opted for only pepperoni and cheese so it would be light enough for our first launch. But, oh, there is just something indescribable about the smell of singed pepperoni, cheese and sauce on the bottom element of the oven! Almost good enough to dissuade any future attempts! But we are forging ahead. Hubby managed to get the third pizza off the stone with very little problems but we put so much flour on metal steel for good measure that we had to brush it off the baked pie before we ate it! But we are intrepid and won't give up. I am the dough maker. It is an eight hour process (which is no problem for this retiree) and the recipe I have been using is from "with spice" and is amazing. After my eight hour labor of love, you can only imagine the salty adjectives I used when watching our pizza being launched against the back of the oven! They were included with, "I'll never make another pizza again". But that is a lie! I'm still at it! I think it is actually addictive! Once again, I loved your article and we are going to take your suggestions. Onward and Upward! 😋
