Hi Lauren, yes, you can still let the dough continue to rise in bulk form for another hour or two, but because you've most likely deflated the dough a bit when taking it out of the bowl, I wouldn't recommend waiting for it to double at this point, since this could cause the dough to have less rising power later in the process. In this situation, I would just estimate how much more time you think the dough might need before you put it in the pan, and then proceed with the recipe from there.
