I have been making the Easy Everyday Sourdough Bread for maybe a year and I love the flavor but the upper crust is way too crunchy and it's very heavy and dense but I continue to make it. My starter is very thick, not sure if that makes a difference or not but it does seem to be active and doubles in 8 hours or less. Any ideas of what my problem might be? I am going to try this new method too as I hate having to discard. Thanks so much for great recipes!
