This makes a lot of sense to me, since I mix the levain the night before the dough is mixed. I have always fed my starter for a day going into mixing the levain, but I always wondered if that was really necessary. After all, the levain is really just a feeding of the starter at a volume that the recipe calls for. I'd be curious as to what others think....
