So delighted to know that I am not alone out there using this exact technique. Started making sourdough in 2015 and have never discarded any. What a waste! Feeding a small amount gives the starter a much better rise. I don't use yeast either, even if the recipe calls for it. In the process of making your Ultimate Sandwich Bagels, with my own starter and have left out the yeast. Sure it takes longer, but I work on my sourdough in-between other household chores.
