I realized this too a long time ago...adding a cold, recently-fed starter to a recipe will still work just fine, I just might need to wait a bit longer on the bulk rise. When in doubt, I add a tiny bit of commercial yeast to the starter in the mixing bowl prior to adding the flour. Never had a problem with this method!
