Thank you for the helpful information! I have a question about the bake itself - most of my loaves get too dark on the bottom. To try to diminish browning I have started in a cold dutch oven instead of already heated, tripled sheet pans on the baking rack below the bread to keep bottom heat from dutch oven and put ice on those sheet pans for moisture in the oven. Where am I going wrong? Thank you!!
