Hi Baker Val, we know that the butter amount is 50% of the weight of the flour (which is always considered 100%). That means that if the butter amount is 500g, then the flour amount will be 1000g. Similarly, we can calculate the weight of each of the other ingredients: Water is 50%, which would also be 500g, salt at 2% would be 1000 X .02 = 20g, yeast at 3% would be 1000 X .03 = 30g, eggs at 50% would be 500g, and sugar at 10% would be 100g. That makes the total recipe weight equal to 2,650g.
