Hi Kola. Thanks for the question! It all comes down to a bit of math here. The easiest way to describe this process is as follows:
Add up all of the percentages listed ( 100+82+2+.5+5=189.5 )
Take the total dough weight of 3000 grams and divide that amount by the total percentages of 189.5 ( 3000/189.5 = 15.83 )
Then take that amount and multiply it by the percentage of each ingredient listed ( Flour is listed at 100%, so 100 x 15.83 = 1583. Water is listed at 82%, so 82 x 15.83 = 1298 )
Do that for each ingredient listed and you can figure out the actual amount needed for that specific size batch.
