Hi Katie, we're so sorry to hear you and your cousin got ill in this way! We're not sure why this occurred, but most cakes are safe to be stored at room temperature for a few days, unless the cake includes an uncooked dairy component in the frosting or filling (such as cream cheese frosting or a whipped cream filling).
