By leaving out a cake for a few days, even if well-wrapped, is risking the possibility of illness. I say this through terrible experience. My cousin and I ate poppy-seed lemon cake that had been left, covered, on a counter for 2-3 days and, within an hour, we were unbelievably sick. Other than possibly something that has a lot of alcohol, i.e. fruitcakes or bourbon balls, etc., I believe that doing this aging of cakes on the counter is taking a big chance and risking food poisoning.
