In my family we’ve always aged carrot cakes - ideally, for 3 or 4 weeks! Yes, unfrosted and wrapped well, and at room temperature. We’ve always speculated that there’s some special chemistry happening between the carrots and the walnuts that takes time to fully develop. The cake is fine eaten fresh - but even better well aged.
