I love aging carrot cake, especially since I'm sensitive to oil tastes. I find that as the spices and carrot flavor deepens, the oil flavor mellows. I've always aged it in the fridge though without issues. In fact, I usually freeze rounds to make it easier to frost, then transfer to the fridge once frosted for a day or two.
