Good question Kay! In our experience, if the cake is well wrapped and out of the light/direct heat, we don't generally find mold on cakes specifically in three days. Still, if you were worried about the formation of mold in that time, I would recommend choosing recipes with a little bit of alcohol in the recipe or glaze or shortening the aging process to two days instead of three to give you a little bit more time to enjoy it before it molds.
