Hi Linda, Vital Wheat Gluten is the extracted proteins from the wheat flour, which will develop gluten once mixed with water. Other companies sell a similar product under the name "Gluten Flour," but I believe they are essentially the same thing, although the gluten flour may include a little more wheat starch, so not quite as concentrated when it comes to the protein content.
