As a vegan and baker I'll be looking forward to your vegan recipes - I know you can do it! And certainly there are a lot of great vegan bakers out there who would love to consult with you. PS - not me, but I have veganized several enriched dough recipes with excellent results. And I've recently started baking with Kernza which has a great flavor.
