Hi Penny, because this butter needs to be refrigerated it does tend to be quite hard. Allowing it to sit out for an hour or so at room temperature may be helpful, and you could also try whipping it with some canola oil or olive oil at the end of the process, which should keep it a bit softer. Look for "spreadable butter" recipes online for some options and tips.
