I tried this today for the first time, didn’t quite work out.
100g very active 6 or 7 day old fed starter (I used todays discard)
450 g KA bread flour (400 plus two 25g additions to get the consistency about right.
375g water
10 grams salt
Results were somewhat dense loaves ( not great rise after two hours)
Hard crunchy crust
Slight sourdough tang
Others went longer in the rise, may try that next time.
Also thought of using 200 grams of starter (almost all the discard) for more rising power.
Any feedback would be appreciated.
