Hi Steven! Because this dough is so exceedingly hydrated and because we want a nice and crispy crust, this dough is intentionally left un-covered. If you were to perform an overnight fridge rise on this recipe, you could cover it but make sure you don't have to peel the cover off the dough as it will stick and damage the rise and structure of the dough.
