Hi Kate!  As long as you are using grated or chopped chocolate, it comes down to a matter of personal taste! Personally, I love chocolate around the 67% range, but I would dare say you could go as high as 80% in this sandwich. Milk chocolate would also be acceptable, but not required in this sandwich.
