I prefer to make my grilled cheese in the oven under the broiler. I use butter on the outside of the bread, (though I may try mayo) and broil it first open faced. This helps the cheese to warm and melt. I then add the top piece of bread, broil until it is the desired color, flip the sandwich and toast the second side. This method is especially great when my grilled cheese has pesto, cheddar and thinly sliced chicken. I also make sure to use a timer as the broiler cooks fast and the sandwich will burn before you know it.
