I do my grilled cheese under the broiler, not fried in a pan. Put mayo or butter on the bread as usual, place it on a baking sheet and put it under the broiler. Watch closely and flip when ready! The texture of the bread is so much better than frying it! If cheese is not fully melted I pop it in the microwave til it is.
